That is not entirely true.  While I haven't really tried to squeeze all of the freespace possible out of my ploop-based containers (because I have a surplus of space), initially ploop only uses the disk space allocated by files.  As more files are added and removed... that disk space is not automatically reclaimed.  vzctl has a compact option that will basically take the free space and give it back to the host.  I've used compact a few times but I don't use it regularly... so I'm not sure how efficient it is nor how good it is at reclaiming 100% of the unused space... but that is what it is there for.  Sure, it is an extra step but at least it is there.

Regarding using ZFZ zvols and mounting them as XFS (or whatever exactly it was you said)... can you install your VM's root filesystem using that?  I know you can use partitions on th ehostif you don't want to use disk-image-as-a-file qcow2 and I've done that a few times... but I primarily use qcow2 and I think most folks do... mainly because it does offer snapshots... although I haven't used snapshots with qcow2 much at all.  I do use snapshots with ploop all of the time because it is part of my backup process.
