Add these lines to the grub configuration:

GRUB_DEFAULT=saved
GRUB_SAVEDEFAULT=true
GRUB_TIMEOUT=1

It means grub would save the last working boot option (in case openvz
kernel won't boot).

Also you need to explicitly set the OpenVZ kernel with grub-set-default command.

In your case (if you want to use 2.6.32-openvz-042stab081.5) you need
to execute:

grub-set-default 2

after that do update-grub and reboot, also make sure /vmlinuz and
/initrd.img symlinks point to correct kernel version (in your case
/boot/vmlinuz-2.6.32-openvz-042stab081.5-amd64 and
/boot/initrd.img-2.6.32-openvz-042stab081.5-amd64 respectively).
